1. Sheet Pan Salmon with Potatoes and Veggies

This one-pan meal is an excellent choice for those afternoons when you just don't want to deal with the hassle of multiple dishes and mess that typically comes with meal-prep. In addition to only using one pan, by lining the pan with parchment paper, clean-up is cut down to almost nothing! It's an incredibly easy and convenient meal that will guarantee your family a delicious serving of carbs, protein and veggies. Salmon is always a great choice, packed with omega 3's, proteins and essential vitamins. You can choose any vegetable to pair with your salmon and potatoes, but I personally love using broccoli, asparagus and green beans.

2. One-Pot Creamy Tuscan Chicken

A rich, velvety sauce of sun-dried tomatoes, spinach, heavy cream and parmesan drizzled over chicken cutlets. Everything simmers in one heavy skillet. Prepare some pasta, rice or mashed potatoes in another pot and the sauce will cling beautifully to it, creating a delectable plate that is rich in protein and has your whole family licking their fingers. If you have the Instant Pot Duo Plus, rice cooks in about 15 minutes, so it will be ready by the time your chicken is creamy and ready to eat.

I love making this recipe with either linguine or spaghetti, and it works beautifully with both! And with how quick it is to make, it ensures that you have much more time to spend on other things.
